St. Patty's Cupcakes with Bailey's Frosting

Last year I was in San Francisco and went to their St. Patty's parade, what a fun and exciting event. So this year I decided to celebrate this special day by making some delicious cupcakes. Here is a quick and easy way to bring some cheer to your St. Patrick's Day festivities.


Ingredients for cupcakes
1 box white cake mix, prepared using directions on box
Green food coloring, I used gel

Bake cupcakes according to box directions and let cool

Ingredients for Bailey's Irish Cream Frosting
3 to 4 c. confections sugar
1 stick unsalted butter, at room temp
( I tried the "light butter" and was happy)
3 TBSP Baileys ( 1 mini bottle), (or milk, or heavy cream or a combination thereof)

In a standing mixer whip butter until light and fluffy. Add Baileys and slowly add confectioners sugar, one TBSP at a time. This ensures the frosting won't become grainy. Frost cupcakes.

Wilton gel coloring is my favorite
