Sicilian Chicken Roll-Ups

I recently mentioned that I went to a gourmet market and bought some pre-made chicken dishes that were just okay tasting. I liked the idea of them so I decided to make my own, wow, what a difference it made! The sweet fresh basil flavor mixed with the salty prosciutto gives the chicken an extra depth of flavor.  This chicken turned out so juicy and flavorful, plus it's fairly impressive looking. This would be a great dish to make ahead of time for a party and then bake right before you need it. 




Ingredients
4 boneless, skinless Chicken Breasts
4 slices Provolone cheese
4 pieces of Prosciutto
fresh Basil Leaves
Salt and Pepper
1/2 c Panko Breadcrumbs 


Preheat oven to 350. Cut chicken breasts into half making the breast one long piece of chicken. Sprinkle with salt and pepper, layer cheese, basil and prosciutto. Roll chicken up and secure with toothpicks. Cover with foil and bake 20 minutes, remove foil, sprinkle with Panko breadcrumbs and bake for an additional 20 minutes or until internal temp reaches 160. Remove from oven and take out toothpicks. 


Ingredients
Slice the breast the long way, making one long piece of chicken
Sprinkle with salt and pepper, place cheese and basil
on chicken
Next place prosciutto on top of cheese
Start from one end and roll chicken up into a spiral
So it looks like this
Secure with toothpicks
Side view of yummy cheese, basil and prosciutto  
Place on baking sheet
Cover with foil and bake for 20 minutes
Remove foil and sprinkle with Panko breadcrumbs,
continue baking 20 minutes or until internal temp
reaches 160. Remove toothpicks
Enjoy!
