BBQ Chicken Pizza (low fat version)

Years ago Tom and I lived near Los Angeles and there was this amazing restaurant California Pizza Kitchen. Now it's on every other block in big cities, but back in the early 90's it was pretty special to us...er Tom, he'd go there for lunch during work and tell me about it.  ( I was home with a small baby) He came home one day raving about their bbq chicken pizza, and that night we made our own. I usually use regular pizza crust but right now we are trying to work off some of the yummy cookies I made over the holidays.

Ingredients
Cooked chicken, chopped- we used leftover smoked chicken (YUM)
Red onion- thinly sliced
2% Mozzarella cheese
Cilantro-freshly snipped
BBQ sauce
crust- we used Flat-outs tonight, and they make great individual pizzas

Preheat oven to 350. Prepare your crust and then spread enough bbq sauce on it to cover the surface. Next add chopped chicken, onion slices, mozzarella cheese and top with cilantro. Bake in over until done, if you are making a pizza using pizza dough your cooking time will be longer than if using the roll-outs. The Flat-outs were done in 8 minutes, a regular pizza would take closer to 20.


Ingredients
Spread bbq sauce on top of crust of your choice
Add chopped/shredded chicken
Red onion slices go on next
It's always better to snip your fresh herbs with scissors than a knife
Ready to go into the oven
What a great tasting and quick dinner.
This version of the pizza is using pizza dough

  1. My all time favorite pizza! I remember the first time you made this for me. I guess it was also the memory of spending time with you (running around finding the best ingredients and talking while I let the pro do her work) that made it such a great memory.

  4. When we lived in Utah I would buy my dough at Dick's, they make great pizza dough. You will love this pizza!
