Dr. Pepper Cake

One of my major weaknesses in life is Diet Dr. Pepper. I love the taste, smell and noise that IS Dr. Pepper; so when I saw this recipe I knew I was going to have to make it. It is an incredibly moist and delicious cake, I actually ate a piece while it was still warm, but shhhh don't tell anyone.



Ingredients for Cake
1 1/2 c Dr Pepper Soda
1/2 c Vegetable Oil
1 Stick Salted Butter
4 TBSP Cocoa Powder
1 c Sugar
1 c Brown Sugar
2 c Flour
1 tsp Baking Soda
2 Eggs
1/2 c Buttermilk

Preheat oven to 350 and grease a 9x13 pan.

Combine soda, oil, butter and cocoa in a saucepan over medium heat. Once it comes to a simmer turn stove off. Mix dry ingredients together, sugar, flour and baking soda. Add to mixture in saucepan and mix well. Don't over beat!!!
In a separate small bowl lightly beat eggs and buttermilk, then add them to the saucepan and combine batter well by hand. Do not over beat!
Pour into a greased pan and bake at 350 for 23-28 minutes or until toothpick comes out clean. Do not over bake!

Ingredients for Frosting
1 Stick Salted Butter
4 TBSP Cocoa Powder
8 TBSP Milk
4 C Powdered Sugar

In a saucepan, combine butter, cocoa and milk over medium heat, stirring occasionally until melted and smooth. Add the powdered sugar a little at a time, combining well after each addition until smooth. Pour over warm cake.
 Frosting ready to go over the warm cake
 I put some cute star sprinkles over the top
