On the road

After a week of traveling my son and I finally made it to Los Angeles, and I can't wait to share all of our yummy food stops with you later on this week. Needless to say I may never eat again once I make it back to Florida.

Cream Cheese Frosting

I absolutely love the flavor of cream cheese frosting on cupcakes, I also love how it compliments so many different flavors of cake. This is a fool proof recipe that turns out every single time.

Ingredients
1 lb cream cheese, softened
2 sticks butter, softened
1 tsp vanilla
4 cups powdered sugar

In a large mixing bowl, beat the cream cheese, butter and vanilla together until smooth. Add the sugar and on low speed, beat until incorporated. Increase the speed to high and mix until very light and fluffy. I like to chill my frosting for a little bit before piping onto cupcakes.

BLT DIP

My family absolutely loves this dip recipe and request it often. It's super easy to make and the flavors will knock your socks off! Remember if serving in warmer months, place bowl of dip in a larger ice filled bowl to keep cool.

Ingredients
1 lb bacon, cooked and chopped
16 oz mayonnaise
16 oz sour cream
3-4 tomatoes, chopped
3 French baguettes, sliced

Cook bacon, cool and chop. In large bowl mix mayo, sour cream, bacon and chopped tomatoes, stir until blended. Refrigerate at least an hour. Serve with sliced baguettes. WOW, see how easy that was!!!!

A mother's job is never done

It's time for me to go into 'super-mom mode' and take some time off from my food blog.  My oldest son is moving to Los Angeles for the summer to work for GOOD magazine. Tomorrow I leave and will be driving to Missouri where my son goes to college, then the two of us are making the trek across the country and on Saturday will end up in Pasadena. I am looking forward to spending some quality one on one time with him and exploring this great country. I've got a few posts that are finished and will be published randomly for the next 10 days.
